Instructions
Preheat: Set your oven to 350°F (177°C). Grease a 9x5-inch loaf pan thoroughly with butter or nonstick spray.
Whisk Dry Ingredients: In a large bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together until combined. Set aside.
Mix Wet Ingredients: In a medium bowl, whisk the oil, brown sugar, granulated sugar, eggs, applesauce, and vanilla extract until completely smooth and glossy. Whisk in the shredded zucchini — don't worry if it looks a little watery, that's exactly what we want.
Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Gently stir or whisk gently until just combined. A few streaks of flour are okay; overmixing will make the bread tough. Fold in the chocolate chips.
Bake: Spread the batter evenly in the prepared pan. Bake for 55–70 minutes. I like to loosely tent the bread with aluminum foil around the 35-minute mark to prevent the top from over-browning. The bread is done when a toothpick inserted into the center comes out mostly clean with a few moist crumbs (but no raw batter).
Cool: Place the pan on a wire rack and let it cool for a full hour. This step is crucial — it finishes setting the structure. After 1 hour, turn the loaf out onto the rack to cool completely if you want clean slices.
Store: Keep leftovers tightly wrapped at room temperature for 3–4 days, or in the fridge for up to a week.

Do not squeeze the zucchini. The moisture is key. Tent the loaf if browning too quickly. Let cool completely for clean slices. Freezes well: wrap tightly and freeze up to 3 months.
