Whisk Dry: In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda.
Whisk Wet: In another bowl, whisk together eggs, canola oil, coconut extract, rum extract, and vanilla until smooth.
Combine: Pour the wet ingredients into the dry. Stir with a rubber spatula until just moistened — a few streaks of flour are okay.
Fold: Gently fold in the drained crushed pineapple, shredded zucchini, and chopped nuts until evenly dispersed.
Fill: Divide the batter evenly among the three prepared pans. Smooth the tops to the corners.
Bake: Bake at 350°F for 45–55 minutes. The loaf is done when a toothpick inserted in the center comes out clean. The top should be deep golden brown and cracked slightly.
Cool: Cool in the pans for 10 minutes at room temperature, then turn out onto wire racks to cool completely. Gently remove the parchment paper.
