- 1/4 cup peanut butter (natural) divided
- 1/4 cup chopped roasted peanuts divided
- 4 ounces dark chocolate bar (70% cocoa) cut into chunks
Prep the dates: Use a small sharp knife to cut a slit lengthwise along one side of each date. Gently pry it open and remove the pit. Don't cut all the way through — you want a pocket, not two halves. Set the dates open side up on a plate.
Fill each date: Spoon 1 teaspoon of peanut butter into the cavity of each date. Top with 1 teaspoon of the chopped peanuts, pressing gently so they stick to the peanut butter. Set the filled dates aside while you melt the chocolate.
Melt the chocolate: Place the chocolate chunks in a microwave-safe bowl. Microwave on high for 30 seconds. Remove and stir vigorously with a spoon. Repeat in 30-second increments, stirring each time, until the chocolate is completely smooth and glossy. This usually takes about 2 minutes total. Don't rush — if you see any lumps, give it another 10-second blast and stir again.
Dip the dates: Stick a toothpick into the top of one stuffed date. Submerge it completely in the melted chocolate. Use a spoon to pour chocolate over any bare spots, then let the excess drip back into the bowl. The chocolate should coat the date evenly but not be too thick — aim for a thin layer that sets into a crisp shell.
Set on parchment: Transfer the chocolate-covered date to the parchment-lined tray, gently sliding it off the toothpick with your finger. Sprinkle the top with a pinch of the remaining chopped peanuts while the chocolate is still wet. Repeat with the remaining dates.

Things I Wish I'd Known the First Time:

- Chop your peanuts finely but not to dust: You want them small enough to stick to the chocolate coating without falling off, but still big enough to give that audible crunch. Pulse them in a food processor or chop by hand — just don't turn them into powder.
- Work quickly once the chocolate is melted: The chocolate starts to thicken as it cools. If it gets too thick, give it a 10-second microwave blast and stir again. Even if you mess up the timing a little, it'll still taste amazing — I've had a few lumpy dates and nobody complained.
