  • 1 cup whole milk
  • 1/2 tsp vanilla extract
  • 1/8 tsp xanthan gum
  • 1 1/2 cups ice
  • Pinch of salt
  • Whipped cream and extra spice blend for topping

Instructions
 

  • In a small bowl, stir together the cinnamon, nutmeg, ginger, and cloves until evenly combined. You will use about 2 tablespoons in the syrup and save the rest for the top.
  • In a small saucepan, combine the water, brown sugar, pumpkin puree, and 2 tablespoons of the spice blend. Whisk until the sugar is mostly dissolved and the pumpkin is broken up, then bring to a gentle boil over medium heat. Do not walk away yet — it can bubble over fast.
  • Drop the heat to a low, lazy simmer. Let it go for 8 to 10 minutes, stirring every couple of minutes, until it smells like a fall candle and tastes rich and spicy when you dip a spoon in.
  • Pour the syrup through a fine-mesh strainer into a jar. Press it through gently with a spoon to get every drop. This keeps the drink silky instead of sandy.
  • Set up your coffee: dissolve instant espresso powder in 2 tablespoons of hot water right in the blender cup, or measure out 2/3 cup of chilled strong coffee.
  • Add 4 tablespoons of the syrup, the coffee, 1 cup of whole milk, the vanilla, a pinch of salt, and the xanthan gum to the blender. Give it one quick stir with a spoon so the xanthan doesn't just sit on top.
  • Add 1 1/2 cups of ice and blend on high for 30 to 45 seconds, stopping once to scrape down the sides. You are looking for a thick, smooth, milkshake-adjacent texture with no ice crunch left.
  • Taste it and adjust. Need more pumpkin spice? Add a small pinch of the spice blend to the blender and pulse. Want it sweeter? Add a little more syrup.
  • Pour into a tall glass, pile on the whipped cream, dust generously with the remaining spice blend, and serve immediately.

Notes

The syrup keeps in a sealed jar in the fridge for 7 days and freezes beautifully in ice cube trays. For dairy-free, use oat milk. For a kids' no-coffee version, drop the coffee, add 1/4 cup more milk and extra ice. A tiny pinch of xanthan gum is the texture secret — don't skip it.
