Mix the base: In a large bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract. Stir until every strawberry piece is well-coated in yogurt. Don't overmix — you want visible chunks of fruit.
Scoop the clusters: Line a baking sheet with parchment paper. Scoop 2-tablespoon portions of the yogurt mixture onto the sheet. You should get about 10 clusters. Leave a little space between each one. Flatten them slightly with the back of the spoon — this gives you a better surface area for dipping later and prevents them from being too thick.
Freeze solid: Place the baking sheet in the freezer. Let the clusters freeze for at least 1 to 2 hours, or until they are completely solid and firm to the touch. This step is not the time to rush — soft clusters will fall apart in the melted chocolate.
Melt the chocolate: Once the clusters are fully frozen, add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15 or 30-second intervals, stirring vigorously in between each one, until the chocolate is fully melted and smooth. It usually takes me about 60 to 90 seconds total.
Dip the clusters: Remove the frozen clusters from the freezer. Work with one cluster at a time. Drop it into the melted chocolate and use a spoon or fork to coat it completely. Lift it out, letting the excess chocolate drip off, and place it back on the parchment. Sprinkle a tiny pinch of sea salt over the top before the chocolate sets.
Hardening step: Put the baking sheet back in the freezer for 5 to 10 minutes. This sets the chocolate shell and re-firms the yogurt. Once the chocolate is hard and matte to the touch, they're ready to eat.
