Equipment

  • Oven
  • 8" x 8" (or 9" x 9") baking pan
  • Aluminum foil
  • Wire rack
  • Large mixing bowls
  • Whisk
  • Rubber spatula

Ingredients

Crust

  • 1 cup unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 lemon lemon zest for the crust
  • 2 cups all-purpose flour

Filling

  • 8 ounces cream cheese (softened to room temperature)
  • 1 cup granulated sugar
  • 1 lemon lemon zest for filling
  • 2 large eggs
  • 5 ounces yogurt or sour cream
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 3 cups blueberries (fresh or frozen; do not thaw)

Instructions

  • Preheat and Prep: Position a rack in the center of the oven and preheat to 350ºF (177ºC). Line an 8" x 8" baking pan with foil, leaving an overhang on two opposite sides. This foil sling is your handle for lifting the bars out cleanly later.
  • Make the crust: In a large bowl, stir together the melted butter, 1/2 cup sugar, vanilla extract, 1/2 tsp salt, and the zest of one lemon. The warm scent of lemon and vanilla will fill your kitchen. Add 2 cups of flour and stir until a soft, cohesive dough forms. Press the dough evenly into the prepared pan—use the bottom of a measuring glass to get it perfectly flat and even. You'll feel the buttery dough yielding under the pressure.
  • Parbake the crust: Bake for 15 minutes, until the edges are lightly golden and the center looks dry and set. Set it on a rack to cool slightly while you make the filling. The crust should still be warm when you pour the filling over it—this helps the layers bond.
  • Make the filling: In a separate bowl, beat the softened cream cheese with 1 cup of sugar and the zest of one lemon until completely smooth. Beat in the eggs one at a time, then the yogurt, lemon juice, and 1/4 tsp salt. Gently fold in the 1/2 cup of flour until just combined—don't overmix or the filling will puff up and crack.
  • Add the blueberries: Gently fold the blueberries into the cream cheese mixture. Try to distribute them evenly without crushing them. Spread the filling gently over the warm crust. The contrast of the deep blue berries against the creamy white filling is stunning.
  • Bake: Bake for 35–40 minutes, or until the edges are set and the center is just slightly jiggly—like a creamy cheesecake. The surface should be lightly golden. If it starts browning too fast, tent loosely with foil for the last 10 minutes. Your kitchen will smell like buttery shortbread and bright citrus.
  • Cool and chill: Let the bars cool completely on a rack at room temperature, then refrigerate for at least 2 hours (or overnight). This step is absolutely non-negotiable if you want clean, sharp slices. The bars need to be fully cold and set—the filling will become firm and sliceable.
  • Slice and serve: Using the foil overhang, lift the slab onto a cutting board. Use a sharp, thin-bladed knife to slice into 16 squares, wiping the blade clean between cuts. Dust with powdered sugar right before serving so it doesn't dissolve into the surface. The sugar settles like fresh snow over the golden tops and purple berry pockets.
